At Hiroshima Ramen Momiji you can order Soupless Tantanmen in three spice levels, mild, medium or hot, and every bowl comes with a small bowl of rice for ¥1,080 (tax included, as of October 2026). If you are not sure, start with mild or medium: the numbing sansho pepper adds a kick on top of the chili heat.
Two kinds of heat
Hiroshima-style Soupless Tantanmen gets its kick from two places: chili, which brings heat, and Japanese sansho pepper, which brings a tingling, numbing feeling. Even the mild level has a little of both.
Which level is right for you?
- Mild: for first-timers and anyone who rarely eats spicy food.
- Medium: for people who enjoy spicy food at home.
- Hot: for real spice lovers.

How to eat it
Mix the noodles with the sauce and toppings from the bottom of the bowl until everything is evenly coated. When the noodles are gone, add the rice to the leftover sauce and mix again.

Where to try it
